Shepherd's Stew

INGREDIENTS:
3 medium potatoes, peeled and diced
2 small onions, chopped
2 16 oz can red kidney beans
1 lb ground beef extra lean
1 6 oz can low-sodium tomato paste
1 10 oz package frozen kernel corn
1 16 oz can chopped tomatoes
salt
pepper



DIRECTIONS:
1. In a large pot, saute the onions and the beef until the onions are translucent and the beef is no longer pink.

2. Add the tomato paste and cook for 10 minutes.

3. Add the rest of the ingredients to the pot, and simmer on low until the flavors are combined and the potatoes are tender, about 8 to 10 minutes.
